The summer means long road trips and destination vacations, which is great. But airport and roadside food is anything but great… With a little preparation, you can save money and eat clean no matter how far you’re traveling.
Before you leave, take a few minutes to pack fresh fruits (apples, pears, and oranges travel well), cut up celery and carrots, snack bars (Larabars are a great option, or make your own with the recipe below), nuts, and some dried fruit. Fill up several water bottles before a road trip, or, if flying, pack an empty water bottle (to fill up after passing through airport security).
Try some of these travel-friendly meals and snacks that fit perfectly in a resealable bag or a standard food storage container.
Homemade No-Bake Snack Bars
This recipe can be easily modified to include any ingredients you have on hand. Pack them in a plastic container or resealable bag and keep frozen until just before leaving for your trip. Or add a little extra nut butter and honey or agave to hold everything together if they need to last more than a day.
- 1 1/2 cup oats
- ½ cup of honey or agave nectar
- 1 cup melted creamy nut butter of choice
- 1 and 1/3 cup of chopped nuts of choice
- 1/3 cup chia seeds
- 1/3 cup shredded coconut
- 2/3 cup dried cranberries (or any dried fruit)
- 1 tsp vanilla (optional)
- 2 tsp cinnamon (optional)
Directions: Combine all ingredients in a large bowl. Spread evenly onto a baking sheet lined with parchment paper and freeze for 1 hour, or until solid. Cut into bars or bite-size pieces.
Hummus Veggie Wrap
A great handheld meal that is easy to eat on the plane or in a car. If you’re concerned about passing through airport security with hummus, 2 oz single-serve packets, which are under the liquid limit, can be purchased at the grocery store and spread on your sandwich after you have passed the security checkpoint.
- 1 whole-wheat pita pocket or tortilla
- 2 tablespoons hummus
- 1-2 leaves of lettuce
- 1/4 cup of bean sprouts
- A few slices of cucumber
- 1/4 of an avocado, mashed
Directions: Arrange all ingredients in bread of choice. Wrap in parchment paper or store in plastic container for traveling.
Bean and Corn Salad
An easy salad that requires no refrigeration or reheating. Throw everything together in a container and give it a shake before you’re ready to eat. Remember to bring a utensil for eating!
- 1/4 cup cooked black beans
- 1/4 cup of corn
- 1/2 bell pepper, chopped
- 2 tablespoons red onion, diced
- 1 garlic clove, minced
- 1 tablespoon lime juice
- 1/2 tablespoon dijon mustard
- A few springs of cilantro, chipped
- Optional seasonings: chili powder, hot sauce, nutritional yeast, salt, pepper, cumin, paprika
Directions: Combine all ingredients in a bowl. Salad will remain fresh for at least a day without refrigeration.
